HOW TO USE:

  • Fully submerge the whetstone in water for 5-10 minutes, until the air bubbles have disappeared 
  • Ensure your worktop is dry and place the non-slip drip tray onto the work surface
  • Remove the stone and place onto the drip tray with the 1000 grit side facing upwards
  • Hold the knife at an angle of 10 - 15°, holding one hand on the handle and placing your other hand on the spine of the knife to guide the direction. You can use the 20° angle guide to help perfect your technique
  • With gentle pressure, move the knife forwards in a sweeping motion from the tip of the blade to the base of the blade, being careful not to lift the knife from the stone
  • Whilst sharpening, continue to add a few drops of water to the top of the stone. The stone particles mixed with water create an abrasive to help sharpen your knife
  • Repeat the process until a fine edge has developed, then turn the knife over and repeat the process on the other side of the blade, remembering to continue adding water to the stone 
  • Now turn over the whetstone to the 6000 grit side, and repeat the process
  • Rinse off the whetstone under running water and leave out to dry fully
  • Rinse off your knife with warm soapy water and dry immediately with a towel
